I love homemade granola and I love nuts and seeds so it would seem like a good bet that I’d love granola bars too, but that’s not the case. In fact, I rarely eat granola bars because I think of them as candy bars in disguise.

Winter Solstice Cookies aka: Choc Choc Chip Cookies (vegan and gluten-free)
The Winter Solstice is my favorite day during the crazy holiday blur (I mean) season. It’s the shortest (and darkest) day of the year which makes it the best day for introspection. I like to share this day with others so I threw a small party and served these wonderful “Winter Solstice Cookies” aka chocolate chocolate chip cookies to celebrate the richness of the dark.
I chose cookies that are wheat-free, gluten free, vegan, easy to make and seductively delicious and this fantastic recipe by Demeter of The Beaming Baker, fit the bill.
Vegan Paleo Cauliflower Stuffing from Food Faith Fitness
This year, Thanksgiving hit me right in the butt. It slammed into me just as I was removing my Halloween costume….WHAM…there it was! It came swiftly and I wasn’t ready. So, when I was trying to decide what to cook for it, I was unprepared. I didn’t have the usual time to mull over recipes and savor the anticipation.
Guilt Free Gluten-Free Seed Bread
Several weeks ago, my husband and I hosted a BBQ with all the accouterments to make grilled steak sandwiches. Grilled meat (none for me), sliced red onions, crimson beefsteak tomatoes, Swiss cheese, spicy sweet mustard and organic mayo to spread onto warmed sourdough baguette. The spread was so appetizing but to my surprise, hardly anyone ate the bread. This is usually my favorite part of the meal. Instead, our friends ate deconstructed “carb-free sandwiches leaving us with 3 long uneaten baguettes.
Valentine’s Day Cupcakes and the Practice of Love
When I was growing up, Valentine’s Day was depressing. I always compared myself to my friends who received more cards, more gifts, and more attention. I convinced myself that they were prettier, more admired, and more lovable. By the end of the day I felt short changed and invisible. To protect myself, I stopped celebrating it.
As I’ve gotten older and more connected to the deeper aspects of myself, I use this day not to compare the number of cards or flowers I get, but to celebrate my own practice of LOVE and my goal of being a more loving person.
Tantalizing Trail Mix Cookies
Exercise has always been an important part of my life. Equally as important as eating a healthy diet. I have woven a life around these practices since they are integral to my peace, happiness and well-being. Therefore, I prefer to take active oriented trips that push me out of my comfort zone and provide exciting experiences in exotic parts of the world. Whether I am hiking in the Alps, diving off Maui, or doing a yoga retreat in Fiji, I grow with each new challenge.
